November 1st is almost here~you know what that means...
November 1st also means the start of later Fall. Dark mornings, darker evenings…and you want a cozy meal when you arrive home after a long day. How do you fit in the healthy eating component to your life? Time management, my friends.
Here are some crock pot or slow cooker meals for you:
Pulled Pork: Put a whole pork roast, 2 chopped onions and a bottle of BBQ sauce. Cook slowly all day and serve with mixed greens.
Beef Stew: Put a package of steak tips, (this is not your Mother's beef stew), and pour a mixture of onion soup mix, cream of mushroom soup (healthy request), and 1 cup of red wine. Serve with roasted vegetables.
Chicken Quesadillas: Mix together fat-free Greek yogurt, reduced-fat shredded cheddar cheese, and a little chick broth. Spoon into whole grain tortillas and cook at 375 for 10 minutes. You can also freeze this and bring up for a ski trip. Serve with brown rice and salsa.
